This delicious dessert is quick and simple to make with just a few ingredients, a bowl and a saucepan. I’ve used frozen blackberries but you can use any fresh or frozen berry or indeed quite a variety of fruit. Apple and rhubarb would be lovely. Just remember you need a bit of juice as the dumplings need to cook in the juice, which will thicken as it cooks.
1 x 500g bag frozen blackberries
1 cinnamon stick
zest of 1 lemon
⅓ cup sugar
½ cup water
Place all the ingredients in a large saucepan that has a lid. Cook them for about 10 minutes, until they are juicy and softened (if you’re using fresh berries it may not take as long, similarly if you are using other fruit this might take a bit longer.
1 cup self raising flour
⅓ cup sugar
⅓ cup milk
Put the flour in a bowl and rub the butter through the flour until it resembles breadcrumbs. Stir through the sugar and then add the milk using a knife to incorporate it. You should end up with a soft, slightly sticky dough. Remove the cinnamon stick from the fruit and then drop six chunks of dough into the saucepan, on top of the fruit. Cover with a lid and then cook over a medium heat for 15 minutes. By this time the dough should be cooked through and resemble puffy dumplings and the juice will have thickened slightly. Serve with cream, ice cream or custard.
